Summer Show – Section G – Domestic Class Title 68 Coffee Cake to recipe 6 ozs Self Raising Flour 6 ozs Caster Sugar 6 ozs Butter or margarine 3 Eggs 2 level teaspoons of instant coffee (dissolved in a little warm water) Cream together the butter and sugar until light and fluffy. Beat in eggs one at a time, fold in sieved flour, then stir in the dissolved coffee. Place mixture in two lined 7 to 8 inch cake tins and bake in oven at 180ºC for 20 to 25 minutes, or until cake springs back when pressed with finger. When cold fill and decorate to own choice.
